Coconut Chicken Strips.....YUMMMMMMM

Invited my friend Julie over for dinner to help me sample a new recipe- Coconut chicken. I love coconut shrimp and this just sounded divine. I found the recipe on Pinterest at Budget Bytes.....oh if I haven't mentioned it before.......I LOVE LOVE Pinterest....supposedly there is a man-version of it callled gentlemint, but I haven't checked it out yet, will have to do that- SOON!

The recipe was fab, I totally recommend it, fairly simply and quite tasty, we paired it with a salad and it was a great meal. I have always loved coconut shrimp, can't believe I didn't think of the chicken on my own.

I did make some minor modifications to the recipe, (like I could follow one to the tee, hah!) and I did switch it up from  the chili sauce to a pina colada sauce- which in my opinion compliments it better, but over all I did stick fairly close to the recipe.
Pina Colada Sauce:
Sour Cream
Crushed Pineapple
Pina Colada Mix
Coconut
 I don't have exact measurements....I just did it to taste.
